Roti noodles

Noodles is an universal favourite food. To make it healthy and refined flour free tried making with wheat rotis. Basically I love noodles but more than the store bought ones the homemade is always better with healthy ingredients and it doesn’t affect our gut. whenever I feel tired or if I want to have noodles I would make this roti noodles. Long back when I tried this for the first time, my father in law liked it very much. He wasn’t a foody person but after having this roti noodles he came and enquired about the dish. He said that it was innovative and liked it very much ! So whenever I make this dish, Im reminded of him. Story behind this dish is my late father in law’s appreciation on my dish. He also gifted me kalki’s Ponniyin Selvan (பொன்னியின் செல்வன் ) Tamil novel. This roti noodles is so close to my heart with his memories.

Veggies can be used as per your  taste and availability. This is amazing noodles recipe without any compromise. Seasonings can also be added as per your choice. Do try it for your family and enjoy it without any guilt.

INGREDIENTS REQUIRED :

Ground nut oil – 2 tbsp

Rotis – 8 no.

Garlic chopped – 1& 1/2 tsp

Big onion chopped – 1 no.

Eggs – 3 no.

Cabbage – 1 cup

Bell pepper – 1 no.

Sczhewan sauce – 1 tsp

Tomato ketchup – 2 tbsp

Red chilli flakes – 1& 1/4 tsp

Dried basil – 1/2 tsp

Dried oregano – 1/2 tsp

Dried Parsley – 1/2 tsp

Pepper powder – 1/2 tsp

Salt as required

METHOD :

Make 8 chappatis (rotis / phulkas).

Roll 3 rotis together. Cut them as shown in picture below.

Shred the cut rotis well using hand to look like noodles. keep it aside.

In a pan heat 2 tbsp ground nut oil and saute garlic 1tbsp and 1 chopped onions.

Add 3 eggs, salt( for eggs), chopped cabbage and chopped bell pepper saute them well.

When egg coats the veggies, add 1& 1/4tsp red chilli flakes.

Add 1 tsp sczhewan sauce and 2 tbsp tomato ketchup, mix well.

Add seasonings like oregano, basil, parsley half tsp each. You can add seasonings of your choice.

Add 1/2 tsp pepper powder and the shredded rotis and finally salt. (note : already added salt for eggs)

Mix them well to combine.

Roti noodles is ready to serve.
