Whole wheat banana dates cake

Whole wheat banana dates cake is difficult to describe as it is uniquely it’s own. I know what you’re thinking about this cake ..my family couldn’t resist tasting it… unexpectedly we had a bunch of friends! I could grab only a piece of it for my blog.

Guilt free crumbly chocolatey cake. Earlier I had posted multi-grain cake and gluten free dates cake but this is a simple go to bowl for a perfect healthy guilt-free snack. Ragi flour is my all time favourite which, I try to add to all my recipes for its nutritional values.

At times banana cakes do betray us because they take 10 minutes more to get cooked. Look for a toothpick inserted into center of the cake to come out clean. Often they need that 10 minutes extra to set for me.

Let cool in pan on a cooling rack for 20 minutes then run a knife around the cake & transfer to a plate. Slice and serve. I’m not a glaze person as calorie counts.

INGREDIENTS REQUIRED:

Wheat flour – 1 cup (250 ml cup)

Ragi flour – 1/4 cup

Cocoa powder – 1/4 cup

Milk (warm) – 1/4 cup + 2 tbsp

Banana (nendram) – 2 no.

Egg – 2 no.

Baking soda – 1/2 tsp

Baking powder -1/2 tsp

Vegetable oil – 80ml

Dates – 21 deseeded

Vanilla extract – 1 tsp

Brown sugar – 2 tsp

Nuts as required

METHOD :

Soak the deseeded black dates in warm

milk for about 15 minutes.

After 15 minutes, to a small mixer jar add the soaked dates and blend to a fine paste.

Keep the dates paste aside.

To a large mixing bowl, add 2 large bananas and mash using a fork.

Now add the dates paste, brown sugar 2 tsp, 2 eggs, vegetable oil 80ml, vanilla extract 1 tsp and whisk well to combine.

Sieve the wheat flour 1 cup, ragi flour 1/4 cup, baking soda 1/2 tsp, baking powder 1/2 tsp and cocoa powder 1/4 cup into the mixing bowl.

Whisk really well and note do not over mix.

Add some flour dusted walnuts to the batter and give it a mix.

Transfer the batter to a greased and lined  8 inches round baking pan.

Top with some nuts of your choice and tap the pan.

In a preheated oven, bake it in 180°c for 40 minutes or until a toothpick comes out clean.

When it is done, let it cool.

Finally slice & serve for your loved ones!
