Sweet potato rice tikkis

Sweet potato rice cutlets are so delicious!Crispy from outside and soft from inside tikkis are shallow fried and tastes like deep fried ones. Sweet potatoes are not usually used in regular south Indian cooking. Replacing potatoes with sweet potatoes are a healthy way of cooking. This recipe results in crispy yummy tikkis. These are made without cornflour and eggs. The word cutlet  immediately brings aloo in our minds but this is healthy cutlets. Anything cooked at home is always healthy!

Tips: Do not leave the potatoes in pressure cooker for a longer period as it may absorb the water in the pressure cooker. So, once it is cooked, when the pressure is released, take the potatoes or sweet potatoes out.

The gap between lunch and dinner is a longer one hence, tea time snack is enjoyed by all of us. We need to think of how nutritious it could be, apart from being tasty.

I had leftover rice so, without wasting it tried these cutlets and it was a big hit. Do try this recipe which calls for just very few ingredients. 

PREP TIME : 25 minutes

COOK TIME : 20 minutes

YIELD :12 cutlets

INGREDIENTS REQUIRED :

Rice (cooked) – 2 cups (250 ml cup)

Sweet potato – 350 gm

Fresh peas – 1 handful

Ginger garlic paste -2 tsp

Green chillies –  4 no.

Red chilli powder – 1/2 tsp

Garam masala  powder – 1/2 tsp

salt as required

Coriander leaves – 3 tsp

Bread crumbs -100 gm

Ground nut oil  for  shallow frying

METHOD :

In a pressure cooker add the sweet potatoes with enough water and give 4 whistles.

Once the pressure is released, immediately take out the sweet potatoes and remove the skin.

Take a large mixing bowl add the cooked sweet potatoes, cooked rice, fresh green peas, ginger garlic paste, green chillies( pulsed in mixer jar), red chilli powder, garam masala powder, coriander leaves (chopped).

Mix everything together to combine.

Make small balls, flatten them and coat with bread crumbs. Refrigerate them for an hour.

Later heat ground oil in a nonstick pan or cast iron pan, fry the tikkis until golden brown on either sides .

Serve the delicious tikkis with tomato ketchup.
