
Fried eggs and greens are a favourite go to quick lunch or dinner. All you need are a handful of greens, eggs and few basic spices to create a satisfying meal in just 10 minutes. When the pantry is bare and you want a quick easy meal without any fuss, you can just try this out with a side of phulka / roti / chappati / rasam rice /curd rice.
I make my kids gulp greens this way. My kids’ favorite greens recipe! So, donot fail to try this recipe for your family.
Basically use greens whatever you happen to have on hand. But this Amaranth greens (sirukeerai) works well. Lots of onions are a must which adds sweetness to the recipe. Whether you serve it for brunch or supper, this dish with greens and eggs is light. This is my paternal grandmother’s recipe. She is a Genius!

INGREDIENTS REQUIRED :
Amaranth leaves (with tender stems) – 1 bunch
Eggs ( big) – 4 no.
Big onion – 1 ( chopped)
Green chillies – 4 no. (slit)
Red chillies – 4 no. (slit)
Sesame oil – 4 tbsp
Mustard seeds – 1/4 tsp
Channa dal – 1/2 tsp
Urad dal – 1/2 tsp
Salt as required
METHOD :
Clean wash drain and chop amaranth leaves with stems and keep aside.
Heat sesame oil in a skillet. Temper mustard seeds. Let splutter then add channa dal and urad dal.
Add curry leaves at this point. I was running out of it so couldn’t add.


Add red chillies and green chillies. Saute chopped onions till translucent.
Now add the chopped greens. In medium flame let it cook. Add salt. Donot add water. Stir occasionally.


When the greens turn tender, crack the eggs into greens.


Stir well until eggs are cooked. Season with salt and pepper ( optional)
(Note : already added salt to greens)
