Karupatti / palm jaggery is a perfect substitute for refined sugar. It is an organic sweetener rich in calcium, phosphorous and iron which are essential for the growth of strong bones and teeth in growing children. It has more nutritional values than cane sugar. It has no added preservatives and not enhanced by any artificial flavours. It has been traditionally used in many Indian sweets. It tastes better than sugar. Energy / protein balls are good snacking for all age groups and also for diet watchers. Tried making these with karupatti (palm jaggery). My family loved it and I have tried this many a times now. Sometimes I grind the mixture smooth and sometimes coarse. This karupatti protein balls are so healthy and tastes extremely good.

INGREDIENTS REQUIRED :
Almonds – 1 cup (250 ml cup)
Karupatti (crushed)- 1 cup (250 ml cup)
Water – 1 cup
Peanut – 1 cup ( 125 ml cup)
Pistachios – 1/4 cup
Pumpkin seeds – 1 tbsp
Flax seeds -1/4 cup
Chia seeds – 1 tsps
Sesame seeds – 1 tsp
Dates – 15 no.
Cardamom – 4 no.
Ghee – 1 tsp
METHOD :
Crush fresh karupatti into small pieces.
Take 1cup crushed karupatti and 1 cup water in a pan.
Allow it to boil and the dissolve the karupatti.
Strain it to remove impurities and keep the syrup aside.
In a pan dry roast 1cup almonds, 1cup peanuts and transfer to a plate.
In the same pan dry roast pistachios, pumpkin seeds, chia seeds,flax seeds and sesame seeds.
Let the roasted nuts and seeds cool down completely. Later, add them to a mixer jar.
Add cardamom and grind them coarsely.
Add the karupatti syrup to a pan and allow to boil( no consistency required)
Now add the coarsely powdered nuts and chopped dates.
Mix well and add ghee to combine.
Stir well and when everything comes together (in 2 minutes), transfer them to a plate.
Make balls when it is warm.
