Generally parathas are packed with nutrients. Ground palak is added to dough, aloo stuffing is made separately, kept inside the dough, rolled, flattened and cooked on a skillet. Any vegetable like beet or carrot can be cooked and added to the dough. It makes the paratha look colourful and attractive too. Healthy meals do require little more effort. INGREDIENTS REQUIRED :
Wheat flour – 2 cups (300gm)
Palak – 1 bunch
Potato – 3 no. (225gm)
Onion – 1 medium size
Red chilli powder – 1 tsp
Ginger garlic paste – 1tbsp
Garam masala powder – 1 tbsp
Carom seeds – 1/4 tsp
Cumin seeds – 1/4 tsp
Turmeric powder – 1/4 tsp
Oil – 2 tbsp
Salt as required.
Butter to smear on parathas.
METHOD :
Pressure cook potatoes, peel the skin, mash it and keep it aside.
In a pan add cleaned palak and add a glass of water.
Close the lid and allow to cook in medium flame for 5 minutes.
When it is done, allow it to cool down and blend to smooth paste using a mixer jar.
In a bowl take wheat flour, ground palak and salt.
Make a dough using little water if required. Keep the dough closed aside.
Heat oil in another pan, temper cumin.
Saute onion and ginger garlic paste.
Now add red chilli powder, garam masala powder, turmeric powder and saute until raw smell goes.
Add in the mashed potatoes, carom seeds and salt. Mix them well.
Now the stuffing is done.
With the dough prepared, make equal sized balls and flatten them.
Take a lemon size potato stuffing and place it on the flattened dough.
Close the dough with stuffing and seal it well .
Now dust flour and flatten the dough using rolling pin without letting the stuffing coming out .
Heat the skillet, place the flattened dough on it and cook on both the sides.
When the brown dots appear, smear some butter .
Now the paratha is done.
Serve the hot paratha with pickle and raitha .
NOTE :
You may replace palak with carrot or beetroot or any other veggie of your choice.
