South Indians usually make idli or dosa regularly for breakfast or dinner. Preparing a different side dish other than the regular sambar, coconut chutney , mint chutney, peanut chutney for idli or dosa is the great thing that troubles every mother . So here , I have a new chutney which goes well with idli or dosa . It calls for just very few ingredients from your pantry. You can even make this side dish with ridge gourd. The vegetable is hidden and it tastes like your onion chutney. You can serve it for your kids and feel good that they had the hidden vegetable in it without knowing that it contains a lot of nutrients. The chutney tastes really yummy dont miss trying it . INGREDIENTS REQUIRED :
Bottle gourd – 1 medium size
Shallots – 1/2 cup
Country tomatoes – 2
Red chillies – 6
Oil – 2 tbsp
Urud dhal – 1/2 tsp
Channa dhal – 1/2 tsp
Curry leaves – few
FOR FINAL SAUTING :
Curry leaves – few
Mustard seeds – 1/4 tsp
Urud dhal – 1/2 tsp
Channa dhal -1/2 tsp
Red chillies – 1 no.
Oil – 1 tsp
INSTRUCTION:
Remove the skin and seeds of bottle gourd.
METHOD :
Heat oil in a wok, saute channa dhal, urud dhal add shallots and fry .
Add in tomatoes and fry them well.
Then transfer it to a bowl and allow it to cool.
In the same wok add the chopped bottle gourd and close the lid and allow it to cook.
Stir occasionally and close the lid.
When it is done allow it to cool down.
Now blend both together in a mixer jar to a fine paste without adding water.
Transfer the chutney to a bowl and do final sauting.
NOTE :
You can try the same chutney with ridge gourd too .
