Idli Podi / gun powder

Idli podi is a spicy powder made with very few ingredients in our pantry. Idli podi can be used in many ways in our food like you can sprinkle in it in dosas, make mini podi idlis and you can sprinkle it in egg dosas too. My family loves homemade this idli podi very much. I usually get lots of curry leaves for preparing this podi. Curry leaves are loaded with iron so, I make sure to incorporate more of curry leaves in this to give my family a nutrient rich one. You can mix it with ghee or sesame oil to go with dosa or idli. This idli podi recipe is my hubby’s favourite! Do try it for your family and stay healthy.

🍴YIELD : 300gm

INGREDIENTS REQUIRED :

Parboiled rice – 1 cup

Urud dhal – 3/4 cup

Cumin seeds – 1 tbsp

Pepper – 1/2 tbsp

Red chillies – 10

Curry leaves – 2 cups

Channa dhal – 1 tbsp

Asafoetida – 1/2 tsp

Salt – 1/2 tbsp

METHOD :

Dry roast the above ingredients seperately one by one.

Roast rice till it gets puffed.

Urud dhal to be roasted untill the colour changes to light brown.

Red chillies just need to be get heated.

Channa dhal need to change in colour.

Pepper to be roasted till it splutters.

Cumin seeds need to be roasted till you get smell of it.

Curry leaves need to be washed, dried and roasted till crisp.

Allow the roasted items to cool down.

In a mixer jar , add the roasted items , asafoetida , salt and blend to a fine powder.

Store the ground powder in an air tight container.

Serve the powder mixed with ghee or sesame oil for idli or dosa.

NOTE :

You can make variation to this podi by adding drumsticks leaves and make drumstick leaf podi.
