
Kids are usually very choosy. When it comes to food, they would prefer to have paneer or chicken based food. I just wanted to try, make them have vegetables somehow. So, this is the recipe I have come up with lots of vegetables and paneer. This subzi is restaurant style gravy loaded with veggies and makes a rich healthy dish with readily available ingredients in your pantry. Subzi goes well with roti, naan and parathas. It is full of proteins and vitamins and your kids would definitely love this subzi. Veggies would vanish with paneer no doubt. Its a perfect dish for party. This subzi is my kids favourite. INGREDIENTS REQUIRED :
Capsicum – 1 full
Carrot – 150 gm
Cauliflower – 200 gm
Beans – 150 gm
Paneer – 1 pack
Big onion – 3 medium size
Country tomato – 2 medium size
Garlic – 8 no.
Ginger – 1 inch
Red chilli powder – 2 tsp
Garam masala powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – 1/2 tsp
Kasthuri methi – 1/2 tsp
Oil – 5 tbsp
Cream – 1 tsp
Cumin seeds – 1/2 tsp
METHOD :
Heat oil (2 tbsp), add roughly cut onions, tomatoes, ginger and garlic. Stir fry until it is cooked.

Allow it to cool down and grind to a paste. You can add little water to grind it.
In same pan add (2 tbsp) oil, add all the cut vegetables and fry them for few minutes. Veggies need not be cooked completely. Let the veggies be crunchy and half cooked. stop fire and Keep it aside .


Heat oil( 1 tbsp ) in a fresh pan. Add cumin seeds and all the powders mentioned above. Just fry them in oil for 2 seconds and add in the ground paste.
Now add the veggies to it.
Add water to adjust the consistency of the gravy.
Add salt and red chilli powder according to your taste. Stir well and allow to boil.
Now add in the cubed paneer pieces to it and give it a boil.
When it is done, stop fire and throw some crushed kasthuri methi.

Finally a tsp of cream gives the finishing touch to this subzi.
Subzi is ready to serve .
NOTE:
Vegetables can be added as per your wish. You can also add potatoes to this subzi.
