
Whole urad dal is diabetes friendly energy booster with more nutritional values. High in protein, calcium and fibre. It is highly recommended for people with joint pains and back pain especially it’s good for women’s health. It keeps you full for a longer period by boosting energy. Ulundhan kanji / urad dal porridge boost milk in lactating mothers. Porridge tastes delicious. You may add or less sweetness according to your taste. It’s a healthy filling porridge for girl kids to have it in the evening when they return from school. If you are diabetic then opt for salt version of this kanji. Salt version preparation is mentioned below.
Whole urad dal is the best for this porridge preparation where you don’t miss any of its nutritional values. Kavuni rice which is said to be forbidden rice adds extra nutrition and flavour to this porridge. Do try sweet / salt version according to your health condition and age.
Dry roast urad dal, kavuni rice for a minute and powder it then store in an airtight container so that you can use it whenever needed. This healthy porridge/ kanji is so easy and you can just make it in few minutes.

SWEET VERSION :
INGREDIENTS REQUIRED :
Black urad dal – 1 cup (80 ml cup)
Black kavuni rice – 1 tbsp
Jaggery – 2 cups
Water – 4 cups
Cardamom powder – 1/2 tsp
Coconut scrapping – 2 tbsp
METHOD :
In a pan take black urad dal 1 cup and kavini rice 1 tbsp.


Dry roast it for 1minutes.

Let it cool down. Later, transfer to mixer jar, grind it and Keep it aside.


In the same pan add jaggery 2 cups and water 1 cup.


Let jaggery melt then strain it.


To the pan add the strained jaggery syrup and the ground powder.


Add 1/2 tsp cardamom powder, 3 cups water and keep stirring. ( you may add 2 cups extra water to make it to liquid consistency but I have made it thick )




Keep stirring until cooked and it reaches pouring consistency.
Finally garnish with 2 tbsp coconut scrappings.

Give it a stir and transfer to serving glass.
Top it with coconut scrappings and serve hot.

NOTE :
For salt version instead of Jaggery, cardamom and coconut scrappings you need to add the below mentioned items.
SALT VERSION :
INGREDIENTS REQUIRED :
Whole urad dal – 1 cup
Black kavuni rice – 1tbsp
Water – 3 cup
Fenugreek seed powder – 1/ 4 tsp
Garlic mashed – 2
coconut milk – 1 cup
Salt as required
METHOD :
Dry roast urad dal and rice and grind to powder. In a pan boil water. Add the ground powder, fenugreek powder, mashed garlic and stir well until cooked. Add coconut milk , salt and give it a boil. Transfer to a glass and serve hot. You may garnish with coriander leaves.
